Preheat oven to 375° F. Beat brown sugar, butter, vanilla and egg in large bowl using electric mixer on medium speed. Stir in flour, baking soda and gingers.
Shape dough by rounded teaspoonfuls into 1-inch balls and place two inches apart on ungreased baking sheets. Flatten to 1/2-inch thickness with greased bottom of a glass dipped in granulated sugar.
Bake for 8 to 10 minutes or until cookie edges are set. Remove from baking sheet and transfer to wire rack to cool completely.
