Make Them Merry With This Dark Chocolate-Pumpkin Holiday Cake


Does your family love the holidays? Make them merry with this decadently delicious (and oh-so-easy) dark chocolate-pumpkin holiday cake.

When the holiday season rolls around, I make sure my pantry is stocked up with all the staples needed for holiday baking: all-purpose flour, baking powder, baking soda, butter, cocoa powder, and every kind of chocolate you can think of!

Pumpkin is a great seasonal ingredient to showcase in holiday baked goods, but I decided to add a twist to this dark chocolate-pumpkin holiday cake: chopped pistachios! Just the right crunch to make this rich holiday cake even merrier for the tongue. I think this is going to become a new family favorite for Christmas morning (if it lasts that long).

Dark Chocolate-Pumpkin Holiday Cake Ingredients

Like every recipe, it’s always easier to bake or cook when you have all your ingredients ready to go (aka mise en place). I use the best ingredients I can find.

Raw, shelled pistachios. Organic free-range eggs — and Bob’s Red Mill flour.

And while I do like to experiment in the kitchen with flavors and textures, I don’t want to experiment with key ingredients – like all-purpose flour – that are essential to baking success. Every baker has to have all-purpose flour on hand; it’s a kitchen staple and can be used for virtually every baking need. I like that Bob’s Red Mill’s All-Purpose Flour is unbleached and organic. It’s freshly milled from organic hard red wheat – and both the bran and the germ are removed. That leaves the endosperm, which is then made into white flour.

Dark Chocolate-Pumpkin Holiday Cake

Yield: 12 servings

Ingredients

2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
2 large eggs
1 1/4 cups dark brown sugar
1/2 cup unsalted butter, melted
1/2 cup buttermilk
2 teaspoons vanilla extract
1 cup canned pumpkin
2 cups dark chocolate chunks or chips
1/4 cup pistachios, chopped

Instructions

Preheat your oven to 350F degrees. Coat a 9x5-inch loaf pan with non-stick cooking spray with flour. Set aside.

In a large bowl, whisk together Bob's Red Mill Organic Unbleached All-Purpose White Flour, pumpkin pie spice, baking powder, baking soda and salt. Set aside.

In a medium bowl, whisk together eggs and brown sugar. Add melted butter, buttermilk and vanilla extract. Whisk until combined. Fold in pumpkin.

Add wet ingredients to the dry ingredients. Whisk until there are no lumps. Fold in dark chocolate chunks and chopped pistachios. Pour batter into prepared baking pan. Level with spatula.

Bake for 50-60 minutes, until cake has risen, crackled and a toothpick inserted near the center comes out clean. Remove and let cool for 20 minutes. Invert onto a wire rack and cool completely.

Store in airtight container for a few days. Makes about 12 servings.

Pumpkin Bundt Cake with Orange-Chocolate Ganache

Pumpkin Bundt Cake with Orange-Chocolate Ganache

Ingredients

1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1/4 cup butter, room temperature
1 cup dark brown sugar
1 cup solid pack pumpkin
1 large egg
1/2 cup buttermilk
2 teaspoons vanilla
1/3 cup bittersweet chocolate, chopped
3 teaspoons orange juice, room temperature

Instructions

Preheat your oven to 350F degrees. Coat a 6-cup Bundt pan with non-stick cooking spray.

Combine flours, pumpkin pie spice, baking powder, baking soda, and salt in medium bowl. Whisk to mix well. Combine butter and brown sugar in large bowl and beat at medium speed until mixed well. Beat in pumpkin and egg. Reduce to low speed and beat in flour mixture. Beat in buttermilk and 2 teaspoons vanilla, just until moistened. Pour batter into prepared pan.

Bake 25 to 30 minutes or until toothpick inserted comes out clean. Cool the cake in pan on wire rack for 10 minutes. Remove cake from pan and cool completely on wire rack.

Melt the bittersweet chocolate slowly in a microwave-safe bowl. Add the juice, a teaspoon at a time, while mixing well with a whisk. Drizzle over the cooled cake.

Marbled Pumpkin Pecan Brownies

These marbled pumpkin pecan brownies remind me of the holidays, so I like to stash away a can of pureed pumpkin in the pantry so I can break out a batch in the spring (or whenever spirits need a little lift).

Marbled Pumpkin Pecan Brownies

Preheat oven to 350° F.  Lightly grease bottom of a 9×9-inch baking pan with butter or shortening. Melt dark chocolate and butter in heatproof bowl, set over a pan of simmering water. Stir constantly until melted and smooth.

In large bowl, whisk together flour, baking powder and salt. Set aside. In stand mixer with paddle attachment, mix sugar, eggs and vanilla. Beat until fluffy. Beat in the flour mixture.

Divide batter in half between two bowls. Stir chocolate mixture into one bowl. In the other bowl, stir in pumpkin, oil, cinnamon, nutmeg and pecans. Transfer half chocolate batter to the prepared baking pan. Then top with half the pumpkin batter. Repeat one more chocolate layer and one pumpkin layer. Using butter knife, gently swirl the two batters to create marbled effect.

Bake for 40 to 45 minutes, or until set. Let brownies cool completely, about 1 hour. Cut into 4 rows by 4 rows to make 16 marbled pumpkin pecan brownies.

Brownie Points: Canned pumpkin contains only pureed pumpkin or squash with low salt. Use this rather than pumpkin pie filling which has added sugar and spices.

6 ounces dark chocolate, chopped
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups granulated sugar
4 eggs
1 tablespoon vanilla
1 1/4 cups canned pumpkin
1/4 cup vegetable oil
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup pecans, chopped

Pumpkin Pie Oatmeal

Ingredients

1/4 cup milk
6 tablespoons water
1/4 cup old-fashioned oats
pinch of cinnamon
pinch of nutmeg
1/2 teaspoon vanilla extract
1/8 cup canned pumpkin
honey for sweetening, to taste

Instructions

In small pot, bring milk and water to boil over medium heat. Add oats, cinnamon and nutmeg. Reduce heat to medium-low and simmer until liquid is absorbed (7 to 10 minutes), stirring occasionally.

Once liquid is absorbed, stir in pumpkin, vanilla and honey, if desired. Serve immediately and sprinkle top with cinnamon.

Caramel-Cinnamon Pumpkin Pie

Preheat oven to 325F degrees. For crust, combine graham cracker crumbs and brown sugar in large bowl. Stir in melted butter until combined. Press crust into bottom and sides of 9-inch pie pan. Bake until set about 6 minutes. Remove pan from oven and cool on wire rack.

Raise heat to 425F degrees. For filling, combine eggs, pumpkin, evaporated milk and brandy in a small saucepan over medium-low heat. Stir occasionally until warm, about 7 minutes. Set aside.

Combine brown sugar, cinnamon, ginger and nutmeg in a large bowl. Stir in the pumpkin-egg mixture. Pour into the crust and bake 10 minutes. Lower heat to 350F degrees and bake until set (35 to 45 minutes). Remove pie from oven and let cool one hour. Refrigerate until ready to serve.

For whipped cream, combine confectioners’ sugar and cinnamon in small bowl. Combine the whipping cream and vanilla in a large bowl. Beat with a mixer on medium-high speed until soft peaks form, about 2 minutes. Add sugar mixture to whipped cream, beat until medium peaks form. Service this caramel-cinnamon pumpkin pie with whipped cream and drizzle with caramel sauce, warmed.

2 tablespoons dark brown sugar
1/4 cup unsalted butter
2 eggs
15 oz pureed pumpkin
12 oz evaporated milk
1 teaspoon brandy
3/4 cup packed dark brown sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
2 teaspoons confectioners’ sugar
1 cup caramel topping
1/2 pint whipping cream
1/2 teaspoon vanilla
